Mango Shrimp Tacos in a Cabbage Leaf Tortilla Wrap

Make your next taco meal healthy with a few easy swaps. You could use shrimp, fish, chicken, beef, or eliminate the meat altogether and use extra beans instead. Skip the highly processed tortilla wrap and instead opt for a healthy recipe with  cabbage leaf or a large romaine lettuce leaf to hold your ingredients together. Instead of sour cream, use plain, nonfat Greek yogurt, it tastes the same! Avoid taco flavored seasoning packets that typically contain MSG, among other chemicals, and season it yourself instead with a few simple spices that you likely already have on your spice rack.

Mango Shrimp Tacos in a Cabbage Leaf Tortilla Wrap Directions:

Heat cabbage leaves at 400 degrees until softened (20-30 min). Place some foil on/around the top, thin edges of leaves to keep from burning. Romaine lettuce leaves can also be used for this recipe and no heating is necessary if using lettuce.

Heat the following ingredients in a large skillet until the onions are softened and the shrimp are cooked through:
•  2 cups of shrimp
•  2 cups of mango – diced (I used frozen mango – it is less expensive than fresh mango and since it is getting heated, you will never know the difference)
•  3 cloves of garlic
•  Half of an onion chopped
•  1 jalapeño (we kept in the seeds since we like it spicy. If you do not like it spicy, keep the seeds out)
•  3 tsp of cumin
•  1 tsp of black pepper
•  1/4-1/2 tsp of salt to taste (I prefer a healthy, Himalayan Pink salt)
•  2 tsp of chili powder

Heat 1 can of black beans separately

Toppings:
•  Shredded cheddar cheese
•  Feta cheese
•  Avocado
•  Tomato
•  Nonfat Greek Yogurt (in place of sour cream)
